DAYMA from Arabic, meaning time and again, or may it (meal) be repeated, is a term used to show generous host gratitude for the shared feast. The menu goes beyond modern, national borders to create the authentic, rich and shared culinary cuisine of the Levant. Some of her popular dishes include Kalbid\u2019s rice kibbeh, aubergine sfiha stars, prawn sambusek, carrot mutabal, cabbage tabbouleh, chicken musakhan, and sour cherry kebbeh \u2013 the dishes bridge past and present by celebrating classics and seasoning them with contemporary touches.<\/p>\n
DAYMA celebrates Bethany\u2019s success as a renowned chef, cookbook author and champion of Middle Eastern cuisine. Her culinary tours throughout Lebanon have taken her on a delicious journey, visiting traditional homes in the countryside and curating century-old recipes handed down through generations. These discoveries into the history of Levantine cuisine have led her to revive forgotten recipes from the region, giving rise to the wonderful menu of DAYMA.<\/p>\n
